Seasonal Inspiration: The Beauty of the Sweet Potato
As autumn approaches, the bounty of sweet potatoes is in full effect. My mother would always say that sweet potatoes have a beautiful flavor and aroma all their own. The key to the beauty of the sweet potato is a slow roast. My mother was absolutely right. Sweet potatoes truly shine when given time to caramelize slowly in the oven. That slow roast coaxes out their natural sugars, transforming them into something deeply flavorful, almost dessert-like, with a texture that’s tender and silky.

Low and slow Roast at 275–300°F for 2–2.5 hours. This allows the starches to convert into sugars gradually.

Keep them whole and unpeeled to trap moisture and intensify the flavor.

Rest before cutting Let them sit for 15 minutes before peeling or slicing — this redistributes the sugars for a perfect texture.
